The concept of ‘dum’ style of cooking brings out the real essence of the Awadhi delicacies with use of uncommon spice ingredients.”
He further adds, “the new menu of Kangan — our authentic Indian dining restaurant — is inspired by the royal kitchens & cooking style of the Nawabs of Lucknow. The Awadhi cuisine is more nuanced in its flavors where each recipe is a ‘secret’ handed down generations.
